Gratitude through Recipes: Paola

H4TG believes that food is a great connector and that sharing recipes are a piece of our heart that tell a story. During this season of gratitude, the H4TG Family extends their stories and invites you to share yours by posting and tagging us on social media.

Paola's Thoughts on Gratitude:

I have so much to be grateful for. Most of my family is pictured in the photo above. That photo encompasses so much love. The recipe that comes to mind when I think of that photo is my Nonna's (grandma's) zucchini patties. No matter what time of year it is, we make them, and I absolutely love them. This year, I challenge you to try this recipe and possibly step out of your comfort zone. I'm grateful for so much, and that includes YOU.

I hope that in sharing this recipe, you can feel the love, too.

Zucchini Patty Ingredients:
2 cups grated zucchini well-drained* (approximately 3 medium zucchini)
1 tablespoon finely chopped onion
1/4 cup Parmesan cheese (25 grams)
1/4 cup flour (32 grams)
2 large eggs
2 tablespoons mayonnaise
1/4 teaspoon oregano
1/4 teaspoon salt
1-2 dashes black pepper
1-2 tablespoons olive oil
*wring out excess moisture with hands

Instructions:
In a medium bowl, mix together all ingredients except for the olive oil.
In a medium to large frying pan over medium heat, heat the olive oil. Drop a heaping large spoonful of the mixture, and cook until browned on both sides.
Drain on a paper towel-lined plate for a couple of seconds, then serve immediately. Enjoy!
